FAQ
How long to thaw a 16 lb turkey?
Per USDA FSIS, refrigerator thawing takes about 24 hours for every 4 to 5 pounds. A 16 lb bird sits on the 12–16 lb band (about 3–4 days) and the edge of the 16–20 lb band (about 4–5 days). Cold water: about 30 minutes per pound (~8 hours), changing the water every 30 minutes, then cook right away.
What internal temperature is a turkey done?
USDA FSIS: minimum 165 °F in the thickest breast, innermost thigh, and innermost wing.
How much turkey per person?
USDA FSIS: 1 pound per person for fresh or frozen turkeys; 1¼ pounds per person for frozen pre-stuffed turkeys (also a sensible leftovers plan).
